Before I got into this BBQ game I thought Tony Roma’s was BBQ 😂. When I started doing more research and recipe testing I quickly realized that BBQ is a CRAFT. It requires countless hours of getting to know your pit (each pit is different), learning how to control the fire & charcoal, and understanding the SCIENCE of open fire cooking and applying to the ART of BBQ. No two cooks are the same, and it will always keep you on your toes.
