Oct 9, 2015 · I like to use equal parts of corn meal, semolina flour and regular flour for my peel dust, I open the dough on the bench/counter top and place it on the peel (wood peel) for dressing, then give it a shake as I take it to the oven just to ensure the dressed skin is loose on the peel, then peel the dressed skin onto the stone for baking.

Cornmeal vs flour......metal vs wooden pizza peel.
Feb 7, 2005 · Also, I assemble the pizza on a wooden peel (with flour) and slide onto the stone. When finished I remove the pizza with the metal peel. The wooden peel provides a more yielding surface for gliding into the oven than the metal peel. When the pizza is ready I use the metal peel as this does not stress the wood with the heat. Any other thoughts?

Mar 28, 2023 · Hi, I make enough dough for two pizzas. I put plain flour onto my wooden peel to launch and I also make it up on it. My motto whilst making it up is shake, shake, shake, to keep it fluid. My partner makes up his pizza on the same peel and uses semolina - tiny little rough ball things to ensure his doesn't stick.

Dec 4, 2020 · My wheel cutter seems to be pretty sharp, has nicked my peel pretty badly or maybe the alumInum peel is a soft grade. I think I will make a purpleheart cutting board/peel of sorts and cut on that as it is rock hard. Aluminum peels will always get etched/scratched. Old pizzerias that use them show thousands of cuts on the pans
