Nov 20, 2015 · After launching a pizza directly from peel to stone, I have had the pizza stick to the wooden peel and ended up with a mess. So, I've started to use parchment paper. Put your pizza on the parchment paper, then slide the paper and pizza on the peel. The parchment and pizza will slide perfectly onto the stone.

Jun 8, 2020 · The less time the dough has to spend on the peel, the less chance it will have becoming one with the peel. Don't get the pizza ready and then go turn on the oven. Once the dough is on the peel, give it a little shake from time to time. Add sauce, shake. Add cheese, shake. Add toppings, shake. When launching, don't just yank back.

Feb 7, 2005 · Also, I assemble the pizza on a wooden peel (with flour) and slide onto the stone. When finished I remove the pizza with the metal peel. The wooden peel provides a more yielding surface for gliding into the oven than the metal peel. When the pizza is ready I use the metal peel as this does not stress the wood with the heat. Any other thoughts?

Semola or Semolina for stretching/non-peel sticking?
Mar 28, 2023 · Hi, I make enough dough for two pizzas. I put plain flour onto my wooden peel to launch and I also make it up on it. My motto whilst making it up is shake, shake, shake, to keep it fluid. My partner makes up his pizza on the same peel and uses semolina - tiny little rough ball things to ensure his doesn't stick.
