Either shirataki or glass noodles should work well in recipes that call for rice noodles -- just note that they are not an exact imitation, so feel free to poke around and see which you like best!

It's in broths that I think Shirataki noodles shine - because they float around looking slightly eel-like and they're great to slurp up out of the bowl using chopsticks.
